What is a cannoli
A crisp shell, a cool ricotta cream, and not much waiting in between.
A cannoli is a fried pastry shell, rolled into a tube and filled with sweetened ricotta cream. The shell is at its best when it shatters a little at first bite, which is why we plan to fill ours shortly before collection rather than hours ahead.
We are starting small and simple: one classic filling, one finishing touch, a limited number of boxes on scheduled dates.

We are not taking orders yet. When the first release is ready, people on the list will hear about it first, with the date, collection details and price.
We only ask for what we need to send you that note. No street address and no payment. See our privacy notice.
Thank you, you are on the list.
We will email you when our first small-batch release is ready. Nothing else to do for now.
Planned format
How our first releases are planned to work
These details describe our plans and may change before the first release. We will confirm everything by email first.
Can I order now?
Not yet. We have not set an opening date. Join the list and we will let you know when the first release is ready.
How will ordering work?
We plan to open preorders for a limited number of six-pack boxes ahead of each scheduled release. Orders will be confirmed before the collection day.
Why preorder only?
Cannoli are best when the shell is filled shortly before eating. Preorders let us make only what has been ordered and fill each box close to collection.
Where and when do I collect?
We plan to use one collection point in the Bacong and Dumaguete area with a short collection window. The exact place and time will be shared with confirmed orders. We are not planning delivery for the first releases.
What will it cost?
Pricing will be announced with the first release.
What about allergens?
Cannoli usually contain wheat, dairy and egg, and some garnishes contain nuts. We will publish the full ingredient and allergen list for each release before you order.
Can I order cannoli as gifts?
We are considering gift-ready boxes. Tick "Gifts" on the form so we know there is interest.
